Congratulations Pam & Luke



My cousin Pamela got married this past weekend. Being the resident cake artist in the family, I had the honour to create their wedding cake. Pamela's tastes were simple & sophisticated, she wanted a tall elegant cake which captured some of the unique features of her bridal gown - the burgundy gathered fabric of the bodice and the beautiful brooch and piping details. So I created a 4 tier square cake - each tier was 6" tall! All tiers were finished in an ivory fondant with burgundy sugar fabric gathered at the base of each tier, in the corners I added the brooch which was made from gumpaste.


Pam also wanted to surprise Luke (her husband-to-be) with a unique groom's cake which showed his love of hockey and her passion for ballet & dance. Originally the design was a bit simple, and in this last week, with her permission, I decided to take it up a notch and surprise them both with a showpiece cake that they will remember for years to come. With the help of my husband (now my resident cake engineer!) I created a standing life size hockey skate and ballet toe shoe. Personal touches such as Luke's nickname, were added to the design in the form of the skate logo.

Bakers Journal Visits Flour Confections!

Last fall, Brian Hartz of The Bakers Journal visited Flour Confections to interview me for an upcoming article.

For those of you who missed out last year, you now have another opportunity to study with Bronwen Weber. Bronwen was recently name as one of Pastry Professional's Top Ten Cake Designers in America!


Back by popular demand, Bronwen & Francois will be joining us again August 23rd & 24th for another 2 days of AMAZING classes.


Our first class on Monday August 23rd will be learning the art of freehand carving. Students will each be given cakes and from those they will be sculpting an amazing bull dog. By the end of the class, students will feel confident to take on their new found skills and apply them to any future project. Space in the class is limited. Our second class on Tuesday August 24th is an exciting one! Students will each be given (yours to keep!) the Caddy Wampus square stand to create a 3 tier topsy turvy style cake. Each side will focus on a different design - 12 designs in all. This class is perfect for those wanting to learn how to create a gravity defying topsy turvy cake! Space is limited.
